Well here goes nothing...

Gundam Wing - I've always been intrigued by Giant Robots, but that not the only facet... I found the story very engaging in a political sense that was done very well. Some of the battles are some of the best animations I've ever seen in a anime.

Inuyasha - I liked this for its sword fighting and great back stories for about every character. It was also fun seeing a love triangle between Kagome, Inuyasha and Kikyo. Only thing that sucks was they really didn't end show. But i hear they did in a graphic novel.

Fullmetal Alchemist - I think its one of the freshest animes ive seen... kept me wanting and waiting watch more and more.

The manga for Inuyasha is still in production, so the story hasn't been concluded there yet either. According to Wikipidia, it is entering its final arc.

Whether or not there will be a concluding anime produced is anybody's guess. The most recent movie was also produced in 2004, so they may feel it has passed it's marketing freshness date.

My preferences (in order):

1. Any yaoi
2. Classic Transformers (if you count that as anime...)
3. Trigun
4. Cowboy Bebop

You heard correctly! The original Neon Genesis Evangelion had 26 episodes. There are also three movies (more or less). This one is on my "to watch someday, eventually" list.

I love anime.

I agree with the opening poster that Bleach is the best one out there. And a Naruto (if you take away the 100 or so filler in the classical series) as a close second.

I have watched these anime:

Bleach
Naruto
Claymore
Death Note
Final Fantasy VII (only one episode)
Night Wizards
Record of Lodoss War
Serial Experiments Lain
Shaka no Shana (first and second)
the Law of Ueki
Witchblade
Evangelion
Marchens Awakens Romance
Dragonball Z (worst anime ever, just a childish all along...)

As for cartoons (which I dont like to mix with anime)
Futurama
Simpsons
Duck Tales
Darkwing Duck
Les Mondes Engloutis (frensh also called spartakus and the sun beneath the sea)
Family Guy
Voltron - Defender of the Universe

The only really good animes are the two first mentioned, tho death note was ok in the beginning.
Of the cartoons I like best Futurama, Simpsons and Family guy ones, the others very quickly become too simple. Because here in the west, we really cannot make cartoons for grownups. Have you seen the spiderman or any other cartoon that is recent? They are so childish it stinks.

My list is relatively short, but I stopped watching anime some time ago - I caught myself watching anything that was anime, because of the medium and not the content within. So the below list is of relatively old stuff:

SE:Lain has been mentioned but is an absolute must for nerds. Spot the Apple references - I dare you. (Then google for Thought Experiments: Lain, which is a fansite, and realize you missed a good quarter of them).

Neon Genesis Evangelion is an absolute mindscrew toward the end. The movies were replacements for e25 and 26, but... Still sort of broken in the head. Very enjoyable, for various reasons. They seem to be recreating this as a new series of movies with the same content (and indeed, the first movie is pretty much a shot for shot recreation of the original first episode). Not entirely certain what to think of that.

Haibane Renmei. By Yoshitoshi ABe, the same person behind Lain. Far less cerebral, far more existential really. Slow for the first 5 episodes, and it took me 3 different tries to get to that point. After that, though, it's absolutely fantastic. Highly recommended for fans of Lain. Those that know me probably know me as a rather gruff and perhaps cold person (not entirely untrue, either :P). I was teary-eyed at least three times watching this.

Neia_7 (pronounced 'Neia under 7'), another by ABe. This one is just fluff, really, and is a good way to unwind after Renmei.

Read or Die: I speak of the 3 episode OAV here. Great action, great pulp, and allusions to the manga that will drive you to read that as well.

ROD The TV: The ROD franchise actually encompasses two storylines: Read or Die, and Read or Dream. ROD The TV merges those two storylines into a single series - And I hesitate giving even this much away, as it's minorly spoilerish. If you liked the paperfights in Read or Die, you'll love some of the scenes in this. There are a couple sorely needed throwdowns that never happen (you'll know what I mean when you see it), but good series none the less.

Trigun and Cowboy Bebop: Classics. I mention them together as really, watching these with someone and watching their reactions will tell you exactly where to go with future suggestions.

I'll warn that all of the above (with the specific exception of Neia_7) will severely ruin a happy day. If you're more the butterflies and happy girls sort, I'd instead suggest:

Azumanga Daioh. I... Yes. I watched, and enjoyed Azumanga Daioh. I can't explain why, other than that it was simply enjoyable to watch.

Great Teacher Onizuka: Deadbeat lowlife becomes a teacher with hopes of scoring with students, and... Instead, it turns into a very interesting series. It's rather low-brow at times, but there's a moment where everyone here will pause, rewind, and make sure they really heard what they just heard. The Everquest quest turn-in fanfare makes a guest appearance.

Oh. Replying to myself...

If Haibane, the end of Bebop and the end of Trigun are too happy go lucky, all is right with the world cheerful, then try Grave of the Fireflies.

If you like Evangelion other than that whiny bitch Shinji, try RahXephon.

If you want to see the dirtiest, filthiest non-porn anime ever made, get your hands on Ebichu the Housekeeping Hamster.

And yeah, my title has been Nekoconeko here for... Years, I guess.

I actually like the orgina Dragon Ball not the one to be confused with Dragon Ball Z. Still had a bit of fighting in it but also had the search for the Dragon Balls. And i think its very hilarious... aka Bulma lifting her shirt to get a dragon ball from the pervy Master Roshi is classic! (Please note no boobs are shown you pervs!)

Chiwassu!

Some of my favorites:

Full Metal Alchemist
Neon Genesis Evanglion
Cowboy Bebop
Witch Hunter Robin
Love Hina
Crest/Banner to the Stars
Code Geass (still airing in Nippon, or section 11 =D)
Death Note
Tenchi
Escaflowne
Gundam Seed
Ghost in the Shell (1st and 2nd Gig)
Twelve Kingdoms
Read or Die
Photon (OVA only)
(Martian Successor) Nadesico
Outlaw Star
Melancholy of Haruhi Suzumiya
His and Her Circumstances (Kind of chick flick that is very addictive)
Kaiba (Still airing in Japan)

Plenty I missed, but a nice starting list of quality shows that are popular too.

Watching Scrapped Princess next!

Outlaw Star, Dragonball Z, Inuyasha, Cowboy Bebop, Bleach, and Full Metal Alchemist are the best ones I've ever watched. Oh and if you are counting movies in there too then Escaflowne is the most awesome anime movie out there.
